Designed around peak demand, not average use

A restaurant’s water use is not spread evenly through the day. It arrives in service peaks, and equipment sized for daily average volume fails at exactly the moment it matters most. Commercial sizing starts from peak simultaneous demand.

The second difference is that downtime costs money. Systems are specified with isolation valves and, where continuity matters, parallel capacity, so that a cartridge change does not stop trade.

The third is that manufacturer specifications often govern. Ice machines, espresso equipment, combi ovens and dish machines frequently state water quality requirements in their warranties — and those requirements are usually discovered when a claim is refused.

Coffee is the clearest example

Coffee equipment needs water in a target range, not water stripped of everything. Water that is too soft produces flat extraction just as surely as water that is too hard produces scale. Some coffee systems need minerals added back after treatment. Maximum removal is not the goal.
